Chicken in Limbo

My wife came up with this recipe while home after having our daughter. This is part of the "religious chicken" series, which also includes Chicken in Paradise (chicken with a heavy sour cream and paprika sauce), Chicken in Purgatory (same as Chicken in Paradise, except substitute fat free sour cream), and Chicken Reincarnate (an Indian-style vegetarian dish). Those last three were only slightly modified from what we found in cookbooks and so aren't original enough for us to put them here.

Ingredients

1 tablespoon olive oil
1 medium onion
10 ounces chicken chopped and cooked
1 14-1/2 ounce diced canned tomatoes
4 chili peppers
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin seed
1-1/2 cups sticky white rice (Sushi rice)
7 ounces canned black beans
1/4 cup shredded coconut
8 ounces pineapple canned in juice

Cooking Instructions

Chop onion and fry in olive oil until clear. Chop chilis into small pieces. Drain tomatoes. Rince the black beans.

Add chicken, tomatoes, cayenne, cumin, chilis, and pineapple to sauce pan. Bring to a boil then cover and simmer for 20 minutes.

Meanwhile, cook rice following package directions. Midway through, add black beans to rice. Toast coconut being careful not to burn it.

Serving

On each plate, make a bed of rice and beans. Spoon chicken mixture onto rice. Sprinkle coconut on top.
